Dan dives deep into the physics and functions of what occurs in the baking process, in real time. Dan will be instructing participants on how to bake breads with our stone-lined, digital Italian deck oven, as well as how to bake with a home oven, using a cast iron Dutch Oven, or firebrick- lined home oven. Dan is proud to announce a new round of hands on, exciting, experiential bread classes, called Breaducation! After that, the class may be transferred to a future class date, once. On day one, Dan will discuss in detail the many aspects of mixing, shaping, and baking, including dough hydration, flour blends, and whole grains. In his Anything But Basic Sourdough Bread Course, Dan will guide you through the entire process of baking his flagship bread, Country, known for its open crumb structure, creamy texture, and deeply caramelized crust. Participants also receive a portion of Dan's sourdough leaven, which as a student they will have fed and maintained already during class, and are given instructions for at home care. Each participant will receive 4-6 loaves of their very own hand - mixed sourdough breads to take home! Columbus, Oh. Dan is ready to offer his extensive knowledge of sourdough process and practice to you, in the form of experiential classes, led by Dan himself. Students will learn Dans sophisticated yet simple shaping method, as well as discussing other techniques used at other bakeries. Dan has over a decade of experience in artisan baking, and has worked at the most renowned bakeries in the world, including Tartine Bakery and Jane bakeries in San Francisco, and Publican Quality Bread in Chicago. Dan will discuss the basics of whole grain and white flours, how to maintain a sourdough leaven (youll be feeding your own culture, and get to take it home to use however youd like!)
